Considered by many to be the purist form of Chardonnay, this Chablis from Louis Moreau’s family vineyards, between Chablis and Auxerre, was fermented and aged on its lees. Pale straw in colour, with that tell-tale green tinge, its combines a mineral thrust with a fresh grapefruit, apples and pear character. Crisp, served lightly chilled (but not too cold) it is the classic combination with grilled and steamed fish, yet equally at home with a roast chicken.
