Honeyed Baked Beans with Drop Scones
From your local Aldi
175g self-raising flour
Couple pinches of salt
Coarse ground black pepper
1 free range egg
1 tbsp Dijon mustard
200ml cold semi-skimmed milk
Vegetable oil
1 can baked beans
½ tsp dried red chilli flakes
4 tbsp chopped fresh coriander
1 tbsp unsalted butter, soft
1 tbsp squeezy honey
Preparation time: 15 minutes
Cooking time: 10 minutes
Serves: 4
Method

1. Mix the flour, salt, pepper into a bowl and mix well. 2. Add the egg, mustard and about ¾ of the milk. 3. Mix to a smooth batter, this should resemble a very thick cream consistency. 4. Add a little more milk if the mixture is too thick. 5. Pre-heat a nonstick frying pan with a couple of teaspoons of oil. |
6. Spoon in the mixture in teaspoon size amounts and cook for 1 minute. 7. Cook until the top starts to bubble and is just set. 8. Warm the beans, with the butter, chilli and honey. 9. Add the fresh coriander, do not warm through too much, just wilt the coriander. 10. Serve the drop scones warm with a good spoon of beans, you can top with a little extra honey and coriander if you want. |
