Irish Cream Banana Special

Ingredients

1 small banana
300ml Irish cream liqueur
100ml white rum
100ml semi-skimmed milk
2 tbsp fudge sauce (see recipe below)
4 balls premium vanilla ice cream
Cocoa powder


Serves: 4 persons

Method

1. Place 1 small banana into a liquidiser.

2. Add 300ml Irish cream liqueur, 100ml white rum, 100ml milk, 2 tbsp fudge sauce (see recipe below), and then blitz really well.

3. Finally place 4 small balls of premium vanilla ice cream into 4 frosted tumblers.

4. Pour over the cocktail and serve, dusted with cocoa powder.



Fudge Sauce

The secret ingredient of the Irish Cream Banana special.

Ingredients


115g unsalted butter
275ml double cream
140g brown sugar
Dash lemon juice

Serves: 4-6 portions

Preparation time: 5 minutes

Cooking time: 10 minutes

Method

1. Make the sauce by placing the butter, sugar, and cream together

into a saucepan and bring to the boil.

2. Whisk well until you have a thick fudgy sauce.

3. Remove from the heat and add the lemon juice.

4. Cool.

 

 

 

Boxing Day Bloody Mary

Ingredients

1 litre tomato juice
200ml vodka
4tsp horseradish
Dash sweet chilli sauce
Juice 2 lemons
Pinch chilli powder
Coarse ground black pepper
Salt


To serve – celery sticks

Serves: 4-6 persons

Method

1. Place 1 litre of tomato juice into a large jug.

2. Add 200ml vodka, mix well.

3. Add 4tsp creamed horseradish, a dash of chilli sauce
and the juice of 2 large lemons, mix really well.

4. Finally, add a pinch of chilli, pepper and salt to taste.
Serve with a stick of celery.



Snowball with a Difference

Ingredients


Advocaat
Veuve Olivier Sparkling Rose´

Serves: 4-6 persons

Method

1. Place advocaat into a tumbler about 1/3 full.

2. Carefully top up with Veuve Olivier pink sparkling wine, taking care to keep the 2 colours separate.

3. Let your guests mix the two beautiful colours themselves.
