Pay Day Dinner
From your local Aldi
1 packet Nasi-Goreng
Braised Aubergines with Garlic and Olive Oil
3 tbsp olive oil1 onion, peeled and finely chopped
2 cloves garlic, chopped
1 aubergine, cut into 1cm pieces
1 vegetable stock cube
coarse ground black pepper
salt
Roast Squash
1 butternut squash, cut in half, then each half into 6 pieces
½ jar Coriander & Chilli Pepper Pesto
2 tbsp olive oil
Preparation time: 25 minutes
Cooking time: 40 minutes in total
Serves: 2-4
Method
1. Pre-heat the oven to 180°C, gas 4.
2. First place the squash into a bowl and mix thoroughly with the half jar pesto and the olive oil.
3. Place onto a baking tray and cook for 35-40 minutes.
4. They will roast up perfectly and will take on a nice colour.
5. Meanwhile heat the oil in a saucepan, then add the onion and the garlic and cook for about 5 minutes to take a little colour.
6. Next add the aubergine and stock cube, mix well and turn the heat right down, cover and gently stew for 30 minutes or so, stirring occasionally.
7. Heat a large frying pan and cook the Nasi-Goreng to the packet instructions.
8. At the 40 minute mark remove the squash and serve with the stewed aubergines and the Nasi-Goreng.
Tips
1. The good thing about this recipe is, once the squash is in the oven, the other two dishes will cook perfectly in the time.
2. Nice way to eat vegetables, very tasty and looks good.
3. The aubergine dish also makes a nice cold salad with tortillas and a blob of yogurt.
4. The squash is nice cut into cubes and folded through cooked pasta with a little extra olive oil and grated fresh Parmesan cheese.
5. Make both the dishes the day before and chill well.
