These crispy fritters are as easy to make as they are tasty
240g Specially Selected British Bacon
360g Sweet Harvest Sweetcorn
120g The Pantry Plain Flour
3 Large Free Range Eggs
Solesta Sunflower Oil

Finely chop the bacon then sauté with a little oil in a frying pan until lightly browned.
Put into a mixing bowl.
Drain the sweetcorn and add to the chopped bacon, then allow to cool.
In another bowl lightly whisk the eggs and milk, season with some black pepper then add to the bacon mix.
Add the flour to the mix slowly, beating as you mix.
Add some oil to the pan and heat, add tablespoons of the bacon batter and fry on either side until golden brown - do this in batches keeping the cooked ones warm while you cook the rest.
Cut the tomatoes in half then grill until browned.
Serve the grilled tomatoes and fritters on a platter for people to help themselves.
