Hearty butternut squash bake with warming Cajun spices, perfect for a chilly autumn night.
250g Long grain rice
1 x 500g Bag frozen butternut squash
1 x Large red onion
2 x Heaped tsp Cajun seasoning
150g Mature plant menu grated cheese
Peel and chop the onion.
Put the rice, Cajun seasoning and 500ml boiling water into a large saucepan and mix well.
Bring to the boil – cover and lower the heat and cook for 8 mins.
Turn off the heat but leave the lid on and allow to steam for another 15 mins.
Preheat the oven to 200°C/gas 6.
Put the frozen butternut squash into a baking dish.
Tip in the rice and mix well, cover with some tin foil and bake for 30 mins.
Take off the foil – sprinkle over the cheese and mix in slightly.
Return to the oven for another 10 mins then serve.
