Get a taste of Greece with this mouth-watering Chicken Gyros with Tzatziki and salad

    Greek Chicken Gyros

    1 x 900g pack Boneless Chicken Thighs

    1 x sachet Gyros style seasoning

    30ml Olive Oil 2 x packs

    4 Seeded or plain, flame baked folded flatbreads

     

    Tzatziki

    300g 10% fat Greek Yogurt

    1 x Cucumber

    2 x Garlic Cloves – peeled and minced

    Juice of one small Lemon

    20ml Olive Oil

    Black Pepper

     

    Salad

    150g Specially Selected Piccolo Tomatoes

    3 x Baby Cucumbers

    1 x large Red Onion

    6g fresh Flat Leaved Parsley

    Method

    Put the chicken thighs in a bowl and sprinkle over the olive oil to coat.

    Then sprinkle over the seasoning and rub well into the chicken thighs.

    Marinate for 1 hour or longer if possible.

    Meanwhile, make the tzatziki.

    Grate the cucumber and squeeze out some of the water.

    In a bowl mix the cumber with the yogurt, garlic, lemon juice and oil – season with plenty of black pepper and mix well.

     

    To make the salad peel and finely chop the onion.

    Cut the tomatoes in half and then cut each half into quarters.

    Cut the cucumbers lengthways into four strips then chop finely.

    Finely chop the parsley.

    Mix all the above together in a bowl.

     

    Griddle, grill or BBQ the marinated chicken thighs for about 15/20 mins – turning as you cook – until charred and cooked through.

    Warm the flat breads.

    Divide the chicken, salad and tzatziki between them and serve.
