100g Kale leaves, trimmed of any tough stalks
2 tbsp coconut oil, softened
200g fresh or frozen raspberries
1 ripe avocado, peeled and stoned
400ml unsweetened soy milk (or cows milk)
Juice of 1 lime
2 tbsp honey
12 ice cubes
Place all the ingredients into a smoothie maker or liquidiser and blend until smooth.
Divide between 2 tumblers and serve at once.
