    Parmesan Broccoli Crisps

    360g Broccoli

    90g Parmesan Cheese, finely grated

    1tsp Garlic Granules

    Pinch of Sea Salt

     

    For the dip:

    2 tbsp Crème Fraiche

    1tsp Sriracha

    Method

    Preheat the oven to 220°C/200°C fan/gas mark 6.

    Break up the florets from the stem and slice them thinly.

    Bring a saucepan of salted water to the boil and blanche the broccoli for 1 minute, drain well in a colander.

    Line a baking tray with baking parchment, sprinkle two thirds of the Parmesan over the paper creating a thin layer, add the broccoli leaving a little space between each floret.

    Press the broccoli with a potato masher gently but firmly, to flatten just a little.

    Sprinkle over the salt, garlic granules & remaining Parmesan.

    Bake for 25-30 minutes, allow it to cool slightly before breaking into pieces and arrange on a plate.

    Take a small bowl and add the crème fraiche, swirl though the sriracha and serve.
