    Pomegranate & Muesli Rolls

    100g Pomegranate seeds

    150g Specially Selected Berries and Cherries Muesli

    700g Strong Flour

    150ml Semi skimmed milk

    1 x 7g sachet dried yeast

    25ml Specially Selected maple syrup

    25ml olive oil

    ½ tsp salt

    300ml sour cream

    A little milk – to glaze


    Put 100g flour, salt and the yeast in a large mixing bowl and mix well

    Gently warm the milk

    Pour milk over the flour and mix well

    Then, add another 200g of flour and the sour cream and mix well

    Add the maple syrup, olive oil and the muesli and mix well

    Add the remaining flour and knead for a few minutes

    Put the dough in a warm place covered with cling film to rest and rise a little for 30 minutes

    Pre-heat the oven to 220°C/425°F/gas mark 7

    On a lightly floured board divide the dough in half

    Then divide these halves into six

    Make into rolls, flatten slightly and sprinkle over the pomegranate seeds

    Fold over the dough to bury the seeds, make into oval shapes and place on lightly greased baking trays

    Allow the rolls to rest in a warm place covered with a clean tea towel for 20 minutes

    Lightly brush the tops of the rolls with milk

    Bake in the oven for 10-15 minutes or until golden brown
