Rainbow Carrot Bake

Ingredients
- 500g Rainbow Carrots
- 60ml Honey
- 45g Salted Butter
- 1 x heaped tsp Ground Coriander
- Sea Salt and Black Pepper
- 8g fresh Thyme
Method
- Pre-heat the oven to 200°C/Gas Mark 6. Peel the carrots and cut in half lengthways. Melt the butter and mix with the honey, season with some salt and black pepper and add the coriander.
- Put the carrots in a baking tray, then drizzle over the honey-butter. Bake in the oven for 35 minutes. Finely chop the thyme. Serve the carrots sprinkled with the fresh thyme.
