Refreshing gin cocktail made with rhubarb and ginger.
Rhubarb Cordial Gin Fizz

Ingredients
Cordial
400g Rhubarb
200g Caster Sugar
Juice and grated rind from 1 orange and 1 lemon
½ tsp Ground Ginger
150ml water
Gin Fizz
35ml London Gin
70ml Rhubarb Cordial
Soda Water
Method
Cordial
Chop the rhubarb into small chunks
Put into a saucepan along with the water, sugar, ground ginger, juice and rind of the orange and lemon
Slowly bring to the boil – then simmer for 15 minutes – until the rhubarb has completely fallen
Whizz in a liquidiser then strain through a sieve
Allow to cool - makes approx. 300ml
Gin Fizz
Put the gin and cordial in a tall glass
Add some ice cubes – top with soda and as piece of fresh rhubarb
