Simple and healthy, this tossed salad mixes tomatoes, lentils, spinach, onions and celery with a delicious, tangy dressing.

    Tomato & Lentil Salad

    400g English Tomatoes

    300g tin Green Lentils, drained

    200g Baby Spinach Leaves

    2 Medium Red Onions

    3 Celery Sticks

    Dressing

    25ml Maple Syrup

    15ml Cider Vinegar

    60ml Olive oil

    1 tsp Dijon Mustard

    1 tsp Paprika

    Sea Salt and Black Pepper

    Method

    Drain the lentils and pat dry.

    Cut the tomatoes into wedges.

    Peel, half and thinly slice the onions.

    Wipe the celery and slice.

    In a large salad bowl, toss all the above along with the spinach leaves.

    Make the dressing by whisking all the ingredients together and season with some salt and black pepper.

    Drizzle over the salad and serve.
