Simple breakfast recipe for smoked salmon and avocado on wholemeal toast.

    Avocado on Toast with Smoked Salmon

    2 x 2 packs Ripe and Ready Avocados

    8ml Rapeseed Oil

    Juice from ½ Lemon

    ½ tsp Paprika

    4 slices Wholemeal Bloomer

    100g Smoked Salmon with Sea Salt and Black Pepper


    Cut the avocados in half and remove the stones.

    With a spoon, scoop out the flesh and put into a bowl.

    Add the rapeseed oil, paprika and lemon juice.

    Season with some salt and pepper.

    With a fork, mash the avocado, mixing well.

    Toast the bread.

    Spread the toast with the avocado spread, fold over some smoked salmon and serve.
