    Clootie Inspired Scottish Steamed Pudding

    150g Self-Raising Flour

    150g Caster Sugar

    150g Perfect for Baking Spread

    2 x large Scottish Eggs

    100g Mixed Dried Fruit

    30ml Scottish Milk

    2 x heaped tsp Mixed Spice

    1 x heaped tsp Ground Ginger

    1 x tsp Vanilla Essence


    Put all the ingredients apart from the mixed fruit into a blender and blend to a smooth batter.

    Put into a bowl and fold through the dried fruit.

    Grease a 750ml pudding basin.

    Transfer the mixture to the basin.

    Cover securely with some buttered baking parchment and them some foil.

    Put a sauce into a large pan and fill a third with water, bring to the boil.

    Place the basin in the pan, cover and steam for 2 hours.

    Check the water every 20 mins and top up with some more boiling water when required.

    Carefully remove the foil and paper, turn upside down on a plate and serve with custard or cream.
