A fun, flavoursome side dish of baked potatoes sprinkled with parmesan cheese.
Crispy Parmesan Accordion Potatoes
4 large Baked Potatoes, pre-cooked
25g Parmesan Cheese, finely grated
60g Unsalted Butter
20ml Olive Oil
Pinch of Garlic Granules
Sea Salt and Black Pepper
4 x Bamboo Skewers
Pre-heat the oven to 200°C/Gas Mark 6.
Remove all the skins off the potatoes, then place on a chopping board.
Poke a pencil into each end, to stop you cutting straight through the potato, and cut vertical slices on one side.
Flip the potato over and cut diagonal slices on that side.
The potato will now pull out if you hold each end – a bit like an accordion.
Push a skewer down through the length of the potato, stretching out the potato as you do.
Repeat this with the other 3 potatoes and place on a baking tray.
Melt the butter, mix in the olive oil and the garlic granules and brush over the potatoes.
Bake in the oven for 20 minutes, turning a couple of times, and bast with any spare butter on the tray.
Remove from the oven to sprinkle over half the cheese and bake for 5 minutes.
Remove from the oven again, turn the potatoes over and sprinkle over the remaining cheese and bake for a further 5 minutes.
Season with some salt and pepper and serve.
