Pea and lemon juice pancakes topped with soft cheese and smoked salmon.
Pea Pancakes Topped with Whipped Soft Cheese & Smoked Salmon
170g Defrosted Frozen/Chilled, Freshly Cooked Peas
80g Plain Flour
1 Large Egg
100ml Semi-Skimmed Milk
Juice of 1 Lemon
100g Soft Cheese
120g Smoked Salmon
Sea Salt and Black Pepper
Add 150g peas, flour, egg, half the lemon juice and the milk to a food processor and blitz until a smooth batter. Season with some salt and pepper.
Heat a little rapeseed oil in a frying pan and add a tablespoon of batter to the pan. Add some of the whole peas and cook for a minute, flip over and cook the other side until just slightly browned. Keep warm in the oven and cook the rest of the batter which should give you 8 pancakes.
Whisk the soft cheese and the remaining lemon juice in a bowl.
Serve a couple of stacked pancakes per person, topped with the soft cheese and smoked salmon.
