Rhubarb sticks poached in apple juice and caster sugar.
500g Rhubarb
200ml Apple Juice
200g Caster Sugar
Cut the rhubarb into 12cm sticks
Put the apple juice and the sugar into a large saucepan
Slowly heat to dissolve the sugar
Then add the rhubarb – bring to the boil and simmer for 1 minute
Take the pan off the heat and allow the rhubarb to cool in the hot liquid
Great served with Greek yoghurt.
