Epic Bread and Butter Pudding

If you have built up a ridiculous amount of baked goods in your freezer then this one is for you! I have used a bread roll here, but you could use any baked goods such as a croissant, bagel or of course normal bread.  

It's also a great way to use frozen eggs (which not many people realise you can freeze). If you know you’ve got eggs at risk of going to waste, simply crack them out of the shells, give them a whisk and freeze them individually or in useable portions, flat in freezer bags. This way they barely take up any space in the freezer and can be defrosted in minutes in a dish of cold water!  

You can of course also make this recipe using fresh ingredients, and simply cool and freeze it to reheat and eat later.

  

Ingredients  

  • 1 Bread Roll (Torn into Pieces - approx. 70g)    
  • 20g Butter  
  • 1/4 tsp Ground Cinnamon    
  • 20g Sultanas  
  • 100ml Flat Frozen Milk (Defrosted or heat from frozen)  
  • 1 Flat Frozen Egg (Defrosted)  
  • 1/4 tsp Vanilla Extract  
  • 1 tbsp Caster Sugar  
  • 1-2 tsp Granulated Sugar  

  

Method

  1. Pre-heat the oven to 180°C / 160°C Fan  
  2. First, melt the butter and toss the bread pieces in it, coating them evenly
  3. Add the sultanas and your cinnamon, stir and then tip everything into a small ovenproof dish
  4. Gently warm the milk in a saucepan over a low-medium heat (you can do this from frozen, just run the bag under the cold tap so you can break it out), and whilst it heats up, pop your egg in a jug, add the caster sugar and vanilla extract and whisk until combined
  5. Keep warming the milk until it’s hot but not boiling; then pour it into your egg mixture, continually whisking until combined. Pour carefully over the bread, making sure the sultanas are all covered so they don’t burn
  6. Sprinkle with the granulated sugar, then put the dish into the oven and bake for 25-30 minutes or until the custard has set and the top is golden brown. Allow to cool for a few minutes, then serve on its own or with a scoop of ice cream if you’re feeling extra indulgent!
