French Onion Jacket Potatoes

Cheesy and filling, this French twist on the classic Jacket Potato makes the perfect meal.

Ingredients
- 4 Jacket Potatoes
- 2 medium Brown Onions
- 50g Salted Butter
- 80ml Red Wine
- 2 Beef Stock Pots
- 350ml Boiling Water
- 1 tsp Garlic Granules
- 1 sprig Fresh Thyme
- 12g Cornflour mixed with 15ml Cold Water
- 120g Gruyère Cheese, grated
- Black Pepper and Sea Salt
- 5g Fresh Parsley, chopped
Method
- Cook the potatoes as the base recipe.
- Peel and thinly slice the onions.
- Sauté them in a pan with the butter for 20 minutes until soft and slightly caramelised.
- Add the thyme, garlic granules, stock pots, red wine, water and some black pepper.
- Bring to the boil, cover and cook gently for 20 minutes.
- Remove the thyme and add the cornflour mixture and cook to thicken.
- Split the potatoes open and make a well in each potato with a spoon.
- Spoon a quarter of the onion mixture into each.
- Top with a quarter of the grated cheese.
- Put back in the oven at 200°C for 10 minutes until the cheese has melted.
- Serve each potato with a sprinkling of the chopped parsley.
