Macaroni and Cheese with Haggis Crumb

Elevate that classic Mac N' Cheese dish with a Scottish Twist.

Ingredients
- 150g Dry Cooked Macaroni
- 750ml Cheese Sauce
- 2 Slices Haggis Crumb
- 200g Cheddar/Mozzarella Cheese
For the Sauce:
- 25g Butter
- 25g Plain flour
- 400ml Milk
- 200g Scottish Vintage Cheddar Cheese (grated)
- Salt to taste
- Pepper to taste
- 100g Mozzarella
Method
- Grate 1 pack of cheddar cheese.
- Take 2 slices of haggis then crumble haggis up and dry fry in a pan until crisp.
- Melt Butter, add flour and cook off in a saucepan.
- Add milk gradually until desired sauce consistency achieved, (for mine I used 400ml - Kirsten).
- Remove from heat, reserve some cheese for the topping, add remainder cheddar and mozzarella cheese to the pan and stir until melted.
- Mix with cooked macaroni and place in an oven proof dish.
- Sprinkle haggis over the macaroni cheese and top with some of the reserved cheese - add more if you like.
- Cook 200°C/180°F/Gas Mark 6 for 20 minutes, remove and allow to cool.
- Garnish with parsley if you like.
