Roasted Pork Belly Ramen

Warming and delicious, treat yourself to a hot bowl of Ramen.

Ingredients
For the Roasted Pork Belly:
- 4 Pork Belly Slices
- 2 tbsp Soy Sauce
- 1 tbsp Caster Sugar
- 1 tbsp Rice Wine Vinegar
For the Ramen:
- 2 packs Ramen Broth
- 2 packs Ramen Noodles
- 2 Eggs
- 1 Pak Choi, washed and halved
- 2 Spring Onions, thinly sliced
- 4 Radishes, sliced
- 1 tbsp Sesame Seeds
- ½ tsp Dried Chilli Flakes
Method
- Place the soy sauce, caster sugar and vinegar into a bowl along with the pork belly slices and leave to marinate for at least 20 minutes.
- Preheat the oven to 200°C/180°C Fan/Gas Mark 6.
- Roast the pork for 30 minutes, then turn over and cook for an additional 30 minutes.
- To cook the soft-boiled eggs, place into simmering water for 6 and a half minutes, then into cold water to cool.
- Prepare the ramen noodles and broth as per pack instructions.
- Simmer the pak choi in the ramen broth for 4-5 minutes until cooked.
- To serve, arrange the noodles in your bowl and top with the broth, pork, soft egg and pak choi.
- Garnish with the spring onions, radishes, sesame seeds and chilli flakes and serve.
