Seafood Sushi

Ingredients
For the Sushi:
- 1 Sushi Kit (Sushi Rice, Rice Vinegar, Nori, Picked Ginger, roll mat, chop sticks)
- 50ml Soy Sauce
For the Fillings:
- 150g extra-large King Prawns
- 125g Seafood Sticks
- 1 Avocado, sliced
- ½ Cucumber, sliced
- ¼ Red Pepper, sliced
- ¼ Mango, sliced (sliced)
Method
- Cook 280g of the sushi rice as per pack instructions.
- Stir the rice vinegar through the cooked sushi rice and leave to cool.
- Lay a piece of nori on the roll mat, then dip your fingers in water and press a layer of rice onto the nori. Leave a strip of plain nori at the top of the sheet, clear of the rice, around 1cm.
- Place your choice of fillings in a line in the middle of the rice, then use the roll mat to help roll up the sushi.
- Wet the clear edge of nori to seal the roll and then leave in the fridge until ready to serve.
- Mix up the fillings between the rolls and you can also make maki (small rolls) by cutting a nori sheet in half and following the same process but with only 1 filling.
- When you have used up your rice and fillings and you are ready to serve, slice the sushi rolls.
- Serve with the soy sauce, pickled vinegar and chop sticks.
