Sesame & Steak Soba Noodles

Transport your tasebuds to another land with this gorgeous soba noddle recipe.

Ingredients

  • 170g Soba Noodles
  • 60g Sugar Snap Peas
  • 75g Tender Stem Broccoli
  • 2 Sirloin Steaks
  • 2 tbsp Vegetable Oil
  • Pinch of Salt
  • Pinch of Pepper
  • 1 Avocado, sliced
  • 4 Radishes, sliced
  • 1 Spring Onion, finely sliced
  • Lemon wedge
  • Small handful of Mint
  • Small handful of Coriander
  • 1 tbsp Sesame Seeds
  • 1 tsp Dried Chilli Flakes

For the Dressing:

  • 3 tbsp Soya Sauce
  • 2 tbsp Rice Wine Vinegar
  • 1 tbsp Honey
  • 1 Garlic Clove, grated 2cm Ginger, grated
  • 1 tbsp Sesame Seeds

  

Method

  1. Mix all the ingredients for the dressing and place to one side.
  2. Cook the soba noodles as per pack instructions.
  3. Blanch the Tenderstem broccoli and sugar snap peas in boiling water for 2-3 minutes.
  4. Pour the dressing over the cooked soba noodles, sugar snap peas and broccoli.
  5. Rub the oil over the steaks and season with the salt and pepper, then pan fry for 4 minutes on each side (medium) and rest for 5 minutes, then slice.
  6. Top the noodles with the steak, avocado, radish and spring onion and garnish with the lemon, sesame seeds, chilli flakes, mint and coriander leaves.
