Sesame & Steak Soba Noodles

Transport your tasebuds to another land with this gorgeous soba noddle recipe.

Ingredients
- 170g Soba Noodles
- 60g Sugar Snap Peas
- 75g Tender Stem Broccoli
- 2 Sirloin Steaks
- 2 tbsp Vegetable Oil
- Pinch of Salt
- Pinch of Pepper
- 1 Avocado, sliced
- 4 Radishes, sliced
- 1 Spring Onion, finely sliced
- Lemon wedge
- Small handful of Mint
- Small handful of Coriander
- 1 tbsp Sesame Seeds
- 1 tsp Dried Chilli Flakes
For the Dressing:
- 3 tbsp Soya Sauce
- 2 tbsp Rice Wine Vinegar
- 1 tbsp Honey
- 1 Garlic Clove, grated 2cm Ginger, grated
- 1 tbsp Sesame Seeds
Method
- Mix all the ingredients for the dressing and place to one side.
- Cook the soba noodles as per pack instructions.
- Blanch the Tenderstem broccoli and sugar snap peas in boiling water for 2-3 minutes.
- Pour the dressing over the cooked soba noodles, sugar snap peas and broccoli.
- Rub the oil over the steaks and season with the salt and pepper, then pan fry for 4 minutes on each side (medium) and rest for 5 minutes, then slice.
- Top the noodles with the steak, avocado, radish and spring onion and garnish with the lemon, sesame seeds, chilli flakes, mint and coriander leaves.
