Festive Bruschetta

A flavourful and visually appealing snack.

Ingredients  

  • 40g Pomegranate seeds
  • 30g Dried cranberries
  • Zest of 1 clementine
  • 1 Baguette, baked and cooled
  • 1 tbsp Olive oil
  • 200g Brie
  • 5g Fresh basil, finely chopped
  • Sea salt and cracked black pepper, to season

Method

  1. Take a medium-sized bowl and combine the pomegranate seeds, cranberries, clementine zest and the basil.
  2. Take the baguette and slice into 12 pieces, brush with oil and grill both sides lightly.
  3. Top each piece with a slice of Brie and place under the grill until the cheese melts and turns gooey.
  4. Remove from the grill and place a teaspoon of the pomegranate mixture on each.
  5. Season well and serve whilst warm.
