Hot Cross Bun-ana Bread

Put the fun in hot cross buns with this tasty take on 'nana bread.

Ingredients
For the bread:
- 250ml Whole Milk, warm
- 500g Strong White Flour
- 7g Fast Action Dried Yeast
- 75g Caster Sugar
- 1 large ripe Banana (around 100g), mashed
- 1 tsp Mixed Spice
- 1 tsp Ground Cinnamon
- 1 Egg
- ½ tsp Salt
- 150g Raisins and Cranberries
Toppings:
- 30g Plain Flour
- 30ml Cold Water
- 2 tbsp Golden Syrup
You will need a greased 900g loaf tin.
Method
- Place the flour, yeast, caster sugar, salt, mixed spice, ground cinnamon, mashed banana and egg into the bowl of a stand mixer fitted with the dough hook attachment. If you don’t have a stand mixer you can use a wooden spoon to mix the ingredients, then knead the dough on a floured work surface for 10 minutes.
- Gradually add the warm milk – you may not need it all – into the bowl and mix until you have a soft and sticky dough.
- Knead for 5 minutes until the dough is smooth and elastic.
- Place the dough into an oiled bowl, then cover and leave for 1-2 hours until doubled in size.
- When ready, knock the air out of the dough by kneading and add the dried fruit.
- Divide the mixture into 8 long dough balls and place next to each other in the loaf tin.
- Cover with oiled cling film, then leave to rise for another 45 minutes.
- Preheat the oven to 200°C/180°F/Gas Mark 6.
- Mix the plain flour and water until smooth, then pipe or spoon this mixture into a cross on top of each mini bun.
- Bake for 25-35 minutes until risen and golden.
- Brush the golden syrup over the warm bread and serve.
