Creamy Garlic Prawn Pizzas

- 250ml Natural Yoghurt
- 375g Self Raising Flour
- 300ml Creamy Lasagne Sauce
- 125g Mozzarella
- 200g Raw King Prawns With Garlic And Herb
- 1 Lemon, Quartered
- 6 Cloves Garlic, Minced
- 100g Cherry Tomatoes, Halved
- 1 Handful Rocket
- Chilli Flakes To Serve
- 1 Tablespoon Butter
- 1 Tablespoon Chopped, Fresh Parsley
- 1 Clove Garlic, Grated
- Salt
Method
- Defrost your prawns by running the packet under cold running water and preheat the oven to 200 degrees.
- To make the pizza dough, add the yoghurt and flour to a large mixing bowl with a pinch of salt and knead together with your hands until you get a soft dough that doesn’t stick to your hands. Add more flour if needed.
- Add flour to your worktop then add the dough on top and knead a bit more until you can divide it into 4 balls. Use a rolling pin to roll out the 4 balls into pizza shapes then place these pizza shapes on to baking paper (you’ll struggle to pick them up to put in the oven if you don’t). Then using a spoon, add 2 tablespoons of the creamy lasagne sauce onto each pizza base and spread it out all over using the back of a spoon.
- Mince or finely chop the garlic and divide it across the pizzas then cut the mozzarella into small cubes and divide it out across the pizzas too. Add the prawns on top with some chopped tomatoes then drizzle with olive oil. Place pizzas in the oven for 15/20 minutes or until they are golden and crispy on top and the prawns are cooked.
- Meanwhile, make a garlic butter by warming some butter up in a bowl (I use the microwave for 10 seconds) then mix in the grated garlic and parsley.
- Remove the pizzas and drizzle the garlic butter over them. Finish with some fresh rocket and chilli flakes and serve with a wedge of lemon.
