Feta Cheese Pillows

Recipe

Creamy feta cheese in soft pastry pockets.  

Serves: 12 people | Prep time: 20 mins | Cooking time: 25 mins

Ingredients

  • 260g Plain Flour
  • 130g Salted Butter
  • 4/5 tbsp Water
  • Pinch of Salt
  • 200g Block Feta Cheese
  • 1 Medium Egg Yolk
  • ½ tsp Garlic Granules
  • 2 tsp Sesame Seeds
  • Pomegranate Seeds
  • Splash of Milk
  • Black Pepper  

Method

  • Combine the flour and salt in a large mixing bowl.
  • Grate the butter (120g) into the flour and rub with your fingers until the mixture resembles breadcrumbs.
  • Add the water slowly and mix to a dough.
  • Turn out onto a floured surface and knead gently.
  • Roll out the pastry with a rolling pin so it is 46cm long and cut into 12 oblongs.
  • Cut the feta into small chunks.
  • Divide the feta chunks between the oblongs, placing the feta in the centre and add a little black pepper.
  • Fold the pastry around them to make pillow shapes.
  • Grease a large baking sheet and put the pillows on with the folds on the bottom.
  • Mix the cooled melted butter (10g) with the milk, egg yolk and garlic granules and paint over the parcels.
  • Sprinkle over the sesame seeds.
  • Bake in the oven for 20-25 mins until golden brown and crispy.
  • Sprinklr with pomegranate seeds and serve with sprigs of coriander.
