Feta Cheese Pillows

Creamy feta cheese in soft pastry pockets.

Ingredients
- 260g Plain Flour
- 130g Salted Butter
- 4/5 tbsp Water
- Pinch of Salt
- 200g Block Feta Cheese
- 1 Medium Egg Yolk
- ½ tsp Garlic Granules
- 2 tsp Sesame Seeds
- Pomegranate Seeds
- Splash of Milk
- Black Pepper
Method
- Combine the flour and salt in a large mixing bowl.
- Grate the butter (120g) into the flour and rub with your fingers until the mixture resembles breadcrumbs.
- Add the water slowly and mix to a dough.
- Turn out onto a floured surface and knead gently.
- Roll out the pastry with a rolling pin so it is 46cm long and cut into 12 oblongs.
- Cut the feta into small chunks.
- Divide the feta chunks between the oblongs, placing the feta in the centre and add a little black pepper.
- Fold the pastry around them to make pillow shapes.
- Grease a large baking sheet and put the pillows on with the folds on the bottom.
- Mix the cooled melted butter (10g) with the milk, egg yolk and garlic granules and paint over the parcels.
- Sprinkle over the sesame seeds.
- Bake in the oven for 20-25 mins until golden brown and crispy.
- Sprinklr with pomegranate seeds and serve with sprigs of coriander.
