Christmas Croissarnie

Serve up a surprising sweet treat packed with mincemeat, mascarpone and brandy for the ultimate festive flavour.

Ingredients

  • 4x All butter croissants
  • 10g Butter
  • 160g Mincemeat
  • 2tsp Brandy
  • 150g Mascarpone
  • 30g Icing sugar
  • 2 Figs- sliced into quarters

Method

  1. Take the croissants and roll them flat using a heavy rolling pin.
  2. Beat the icing sugar and mascarpone together in a bowl until smooth. Take a piping bag/sandwich bag, cut off the tip and fill this with the mascarpone.
  3. Heat a pan on high and fry the croissants in the butter on both sides.
  4. Heat the mincemeat and the brandy in the microwave for 40 seconds until warm.
  5. Slice the croissants in half and place 4 of them on plates pipe on the mascarpone and top with the mincemeat. Place the other 4 croissants on top carefully. Dust with icing sugar, decorate with figs and eat whilst warm.
