Sensational honey-butter and thyme carrot dish
Rainbow Carrot Bake
500g Rainbow Carrots
45g Salted Butter
1 x heaped tsp Ground Coriander
Sea Salt and Black Pepper
8g fresh Thyme
Pre-heat the oven to 200°C/Gas Mark 6. Peel the carrots and cut in half lengthways. Melt the butter and mix with the honey, season with some salt and black pepper and add the coriander.
Put the carrots in a baking tray, then drizzle over the honey-butter. Bake in the oven for 35 minutes. Finely chop the thyme. Serve the carrots sprinkled with the fresh thyme.
