    1 x pack 250g – 2 Fresh Cod Fillets

    135g Cherry Tomatoes

    150ml White Wine

    1 x Clove garlic

    Pinch of Chilli Flakes

    1 x tsp Dried Parsley

    10ml Lemon Juice

    2 x Slices Parma Ham


    Preheat the oven to 200°c/400°f/gas 6

    Cut the tomatoes into quarters

    Peel and finely chop the garlic

    Put the cherry tomatoes, garlic, white wine, parsley, lemon juice and chilli into a small saucepan – bring to the boil – put on the lid and simmer gently for 5 mins

    Meanwhile – cut the cod steaks or fold them to make two neat parcels – wrap the Parma ham around them

    Put the tomato sauce into a small roasting dish

    Put the cod parcels on top

    Roast in the oven for 20 mins
