Garlic Butter King Prawn Alfredo

Ingredients

  • 200g Raw king prawns (defrosted if frozen)
  • 50g Spaghetti per person
  • 300ml Single cream
  • 50g Grated parmesan
  • 1 tsp Smoked paprika
  • ½ tsp Cayenne pepper
  • 250g Cherry tomatoes, halved
  • 4 Garlic cloves, minced
  • 1 White onion, finely chopped
  • Fresh parsley, chopped

  

Method

  1. Defrost prawns under cold running water.
  2. Cook spaghetti in salted boiling water until al dente. Reserve some pasta water before draining.
  3. In a large frying pan, sauté onion in oil for 2–3 minutes. Add garlic, paprika, and cayenne.
  4. Add halved tomatoes and cook until soft. Add prawns and a knob of butter. Cook until prawns turn pink.
  5. Add cream and parmesan. Stir in a splash of pasta water to loosen the sauce.
  6. Add cooked spaghetti directly into the sauce using tongs. Toss to combine.
  7. Stir in chopped parsley and serve hot.
