Blackberry Champagne Mule Punch

With fresh blackberries and a kick of ginger, this refreshing punch is a taste sensation.

Ingredients
- 2 x 150g Packs Fresh Blackberries
- Juice of 2 Limes
- Juice of 1 Lemon
- 350ml Vodka
- 20g Fresh Peeled Ginger
- 250ml Cranberry Juice
- 1 Bottle of Chilled Champagne
- Ice
- More Lemon, Limes and Ginger, to serve
- Basil Leaves, to serve
Method
- Finely chop the ginger.
- Put 150g blackberries, the juices from the limes and lemon and the ginger in a small blender or liquidiser and pulse until blended.
- Put this into a large pitcher with plenty of ice.
- Pour in the cranberry juice, vodka and slices of fruit and ginger.
- Mix well.
- Add the Champagne, stir through and serve in chilled glasses with a few basil leaves.
