Green Tea & Lime Tom Collins

A refreshing take on the classic Tom Collins.

Ingredients
For the Green Tea Syrup:
- 2 Green Tea Bags
- 200g Caster Sugar
For the Green Tea Tom Collins:
- 50ml Gin
- 30ml Green Tea Syrup
- 30ml Lime Juice
- Soda Water
To garnish:
- Slice of Lime
Method
- Pour 200ml of boiling water onto the teabags and leave for 5 minutes to stew.
- Remove the tea bags, then pour the tea into a small saucepan along with the caster sugar.
- Bring to a boil and ensure all the sugar has dissolved, then leave to cool.
- Store the syrup in a jar. Any remaining green tea syrup can be used in other drinks or desserts.
- Fill a long glass with ice and pour over the gin, green tea syrup and lime juice and stir.
- Top with soda water and garnish with fresh lime, then serve.
