Green Tea & Lime Tom Collins

A refreshing take on the classic Tom Collins.

Ingredients

For the Green Tea Syrup:

  • 2 Green Tea Bags
  • 200g Caster Sugar

For the Green Tea Tom Collins:

  • 50ml Gin
  • 30ml Green Tea Syrup
  • 30ml Lime Juice
  • Soda Water

To garnish:

  • Slice of Lime

  

Method

  1. Pour 200ml of boiling water onto the teabags and leave for 5 minutes to stew.
  2. Remove the tea bags, then pour the tea into a small saucepan along with the caster sugar.
  3. Bring to a boil and ensure all the sugar has dissolved, then leave to cool.
  4. Store the syrup in a jar. Any remaining green tea syrup can be used in other drinks or desserts.
  5. Fill a long glass with ice and pour over the gin, green tea syrup and lime juice and stir.
  6. Top with soda water and garnish with fresh lime, then serve.
