Yuzu Inspired Lychee Martini

Ingredients

For the Lychee Syrup:

  • 120g Lychee, skins and stones removed
  • 120g Caster Sugar

For the Martini:

  • 50ml Gin
  • 20ml Lime Juice
  • 10ml Orange Juice
  • 20ml Lychee Syrup

To serve:

  • 1 Lychee
  • 1 slice of Lime

  

Method

  1. Roughly chop the lychee and place in a saucepan with the caster sugar and 100ml of water.
  2. Bring to a boil and simmer for 8-10 minutes until thickened enough to coat the back of a spoon.
  3. Leave to cool, then pour through a sieve and store in a jar, the leftover syrup can be used for drinks, desserts, yogurt pots etc.
  4. To make the martini, pour all the ingredients into a cocktail shaker with some ice and shake.
  5. Strain into a martini glass and garnish with the lychee and lime and serve.
