Yuzu Inspired Lychee Martini

Ingredients
For the Lychee Syrup:
- 120g Lychee, skins and stones removed
- 120g Caster Sugar
For the Martini:
- 50ml Gin
- 20ml Lime Juice
- 10ml Orange Juice
- 20ml Lychee Syrup
To serve:
- 1 Lychee
- 1 slice of Lime
Method
- Roughly chop the lychee and place in a saucepan with the caster sugar and 100ml of water.
- Bring to a boil and simmer for 8-10 minutes until thickened enough to coat the back of a spoon.
- Leave to cool, then pour through a sieve and store in a jar, the leftover syrup can be used for drinks, desserts, yogurt pots etc.
- To make the martini, pour all the ingredients into a cocktail shaker with some ice and shake.
- Strain into a martini glass and garnish with the lychee and lime and serve.
