Father's Day Chickpea & Courgette Curry

Ingredients
- 2 tins Chickpeas, drained and rinsed
- 1 tin Coconut Milk
- 2 Courgettes
- 1 Onion
- 2 Garlic Cloves
- 1 Lime
- 1 tbsp Medium Curry Powder
- 1 tsp Turmeric
- 1 Green Chilli
- 1 Vegetable Stock Cube
- 200ml Hot Water
- 2 tbsp Vegetable Oil
- Salt and Pepper
- Basmati Rice, to serve
- Coriander, to serve
Method
- Slice the courgettes and fry in a large pan for a few minutes on each side, until slightly golden. Set the slices aside and return the pan to the heat.
- Dice the onion, garlic and chilli and fry for a few minutes until softened. Add in the spices, chickpeas and courgettes and cook for a few minutes.
- Mix the vegetable stock with boiling water and add to the pan with the coconut milk.
- Simmer for 15 minutes with the lid on until slightly reduced and glossy looking.
- Season with salt and pepper to taste, and squeeze over some fresh lime juice.
- Serve with basmati rice, fresh coriander and lime.
