Father's Day Chickpea & Courgette Curry

Full of veggies and spice, this curry is sure to be a hit with Dad.

Ingredients

  • 2 tins Chickpeas, drained and rinsed
  • 1 tin Coconut Milk
  • 2 Courgettes
  • 1 Onion
  • 2 Garlic Cloves
  • 1 Lime
  • 1 tbsp Medium Curry Powder
  • 1 tsp Turmeric
  • 1 Green Chilli
  • 1 Vegetable Stock Cube
  • 200ml Hot Water
  • 2 tbsp Vegetable Oil
  • Salt and Pepper
  • Basmati Rice, to serve
  • Coriander, to serve

  

Method

  1. Slice the courgettes and fry in a large pan for a few minutes on each side, until slightly golden. Set the slices aside and return the pan to the heat.
  2. Dice the onion, garlic and chilli and fry for a few minutes until softened. Add in the spices, chickpeas and courgettes and cook for a few minutes.
  3. Mix the vegetable stock with boiling water and add to the pan with the coconut milk.
  4. Simmer for 15 minutes with the lid on until slightly reduced and glossy looking.
  5. Season with salt and pepper to taste, and squeeze over some fresh lime juice.
  6. Serve with basmati rice, fresh coriander and lime.
