Blueberry Lychee Mocktail

Ingredients

  • 150ml Soda Water
  • 6 Ice Cubes, crushed (to serve)
  • 2 tbsp Lime Juice

Lychee Syrup:

  • 100g Lychees, skins and stones removed
  • 50g Caster Sugar
  • 30ml Water

Blueberry Syrup:

  • 100g Blueberries
  • 50g Caster Sugar
  • 40ml Water

Garnish:

  • 2 Lychees, skins and stones removed
  • 2 Blueberries
  • 2 Pineapple Leaves

  

Method

  1. Roughly chop the lychees and place in a saucepan with the caster sugar and water. Bring to the boil then simmer until you have a thick syrup. Allow this to cool and strain through a sieve.
  2. Place the blueberries in a pan with the caster sugar and water. Bring to the boil then simmer for a few minutes until you have a sticky syrup. Allow this to cool and blitz until smooth.
  3. Make the garnish by placing the blueberries inside the lychees to resemble two eyeballs.
  4. Place the ice in the glass, pour over a little of the lychee syrup and top with the lime juice and soda and stir.
  5. Spoon over the blueberry compote, top with the eyeball garnishes and pineapple leaves and serve immediately.
