Blueberry Lychee Mocktail

Ingredients
- 150ml Soda Water
- 6 Ice Cubes, crushed (to serve)
- 2 tbsp Lime Juice
Lychee Syrup:
- 100g Lychees, skins and stones removed
- 50g Caster Sugar
- 30ml Water
Blueberry Syrup:
- 100g Blueberries
- 50g Caster Sugar
- 40ml Water
Garnish:
- 2 Lychees, skins and stones removed
- 2 Blueberries
- 2 Pineapple Leaves
Method
- Roughly chop the lychees and place in a saucepan with the caster sugar and water. Bring to the boil then simmer until you have a thick syrup. Allow this to cool and strain through a sieve.
- Place the blueberries in a pan with the caster sugar and water. Bring to the boil then simmer for a few minutes until you have a sticky syrup. Allow this to cool and blitz until smooth.
- Make the garnish by placing the blueberries inside the lychees to resemble two eyeballs.
- Place the ice in the glass, pour over a little of the lychee syrup and top with the lime juice and soda and stir.
- Spoon over the blueberry compote, top with the eyeball garnishes and pineapple leaves and serve immediately.
