Truffle Mash.
Serves: 6 people | Prep time: 5 minutes | Cooking time: 15 minutes

Ingredients
- 1.5kg Maris Piper Potatoes
- 100g Truffle Butter
- ½ tsp Dried Rosemary
- 100ml Single Cream
- Sea Salt and Black Pepper
- Fresh Parsley
Method
- Peel the potatoes and cut into large chunks.
- Put into a large pan and cover with cold water and season with some salt.
- Bring to the boil, cover and simmer for 10-12 minutes until tender, then rain well.
- Put back on a low heat and add the butter, rosemary, some black pepper and cream and mash well until smooth.
- Serve with a pat of truffle butter and some fresh chopped parsley to garnish.
