Truffle Mash

Truffle Mash.

Serves: 6 people | Prep time: 5 minutes | Cooking time: 15 minutes

Ingredients

  • 1.5kg Maris Piper Potatoes
  • 100g Truffle Butter
  • ½ tsp Dried Rosemary
  • 100ml Single Cream
  • Sea Salt and Black Pepper
  • Fresh Parsley

Method

  1. Peel the potatoes and cut into large chunks.
  2. Put into a large pan and cover with cold water and season with some salt.
  3. Bring to the boil, cover and simmer for 10-12 minutes until tender, then rain well.
  4. Put back on a low heat and add the butter, rosemary, some black pepper and cream and mash well until smooth.
  5. Serve with a pat of truffle butter and some fresh chopped parsley to garnish.
