Christmas Tree Iced Biscuits

Ingredients
Biscuits:
- 170g Unsalted Butter
- 90g Caster Sugar
- 1 Egg Yolk
- Zest of 1 Small Orange
- 225g Plain Flour
Buttercream:
- 150g Unsalted Butter
- 300g Icing Sugar
- 1 tbsp Milk
- 1 tsp Vanilla Extract
- 1-2 tsp Green Food Colouring
Decorations:
- Sprinkles
- Chocolate Fingers
- Crushed Candy Canes
- Star-Shaped Sweets
- Christmas Tree-Shaped Biscuit Cutters
- Piping Bag
- Assorted Piping Nozzles
Method
- To make the biscuits, beat the sugar and butter with an electric mixer for a couple of minutes until fully combined.
- Add the egg yolk and orange zest and mix until smooth.
- Add the flour and stir until combined.
- Wrap the biscuit dough and leave to rest for 20 minutes in the fridge.
- Preheat the oven to 190°C/170°C fan/gas mark 5.
- Roll out the dough to around 1/2cm thick, then use Christmas tree cookie cookers to cut out the biscuits or use a knife to hand-cut tree shapes.
- Bake for 10-12 minutes until lightly golden.
- Leave to cool, then make the buttercream by beating the butter with an electric mixer for 5 minutes until light and fluffy.
- Gradually add the icing sugar, beating in between until fully incorporated.
- Add the milk and vanilla extract and beat until smooth.
- Divide the icing between 2 bowls and add green food colouring to each to make a lighter and darker shade of green.
- Place into piping bags and use a variety of piping nozzles to decorate the biscuits with buttercream.
- Decorate the biscuits with the sprinkles and sweets, then use pieces of the chocolate fingers to create a tree trunk and serve.
