Method

  1. To make the biscuits, beat the sugar and butter with an electric mixer for a couple of minutes until fully combined.
  2. Add the egg yolk and orange zest and mix until smooth.
  3. Add the flour and stir until combined.
  4. Wrap the biscuit dough and leave to rest for 20 minutes in the fridge.
  5. Preheat the oven to 190°C/170°C fan/gas mark 5.
  6. Roll out the dough to around 1/2cm thick, then use Christmas tree cookie cookers to cut out the biscuits or use a knife to hand-cut tree shapes.
  7. Bake for 10-12 minutes until lightly golden.
  8. Leave to cool, then make the buttercream by beating the butter with an electric mixer for 5 minutes until light and fluffy.
  9. Gradually add the icing sugar, beating in between until fully incorporated.
  10. Add the milk and vanilla extract and beat until smooth.
  11. Divide the icing between 2 bowls and add green food colouring to each to make a lighter and darker shade of green.
  12. Place into piping bags and use a variety of piping nozzles to decorate the biscuits with buttercream.
  13. Decorate the biscuits with the sprinkles and sweets, then use pieces of the chocolate fingers to create a tree trunk and serve.
