Teriyaki Tofu BBQ Skewers

Ingredients
For the teriyaki sauce
- 70ml Soy Sauce
- 4 tbsp Soft Dark Brown Sugar
- ¼ tsp Garlic Powder
- 1 tsp White Wine Vinegar
- 2 tbsp Cornflour
- 60ml Cold Water
For the skewers
- 200g Organic Tofu Firm
- ½ small Pineapple, cut into chunks
- 1 Red Pepper
- 1 Red Onion
- 1 Courgette
- ½ Lime, cut into wedges
- 15g Fresh Parsley

Method
- Add all the sauce ingredients, except the cornflour and water, to a small saucepan. Cook on a low heat for around 2 minutes, until heated through. Combine the cornflour and water, add to the pan, then cook on low, stirring constantly until the sauce has thickened (around 7 minutes).
- Light the BBQ and leave it burning until your coals are white or pre-heat for 5 minutes if using a gas BBQ.
- Cut the pepper in half, remove the seeds and chop into large square pieces. Cut the onion into similar sized chunks.
- Cut the Tofu into cubes and place in a bowl with the pineapple chunks, onion and peppers and the teriyaki sauce. Mix well to thoroughly coat all the ingredients, cover and leave to marinate for at least 20 minutes, then thread onto skewers.
- Cook on the BBQ for a few minutes on each side (3-5 minutes, depending on how hot your BBQ is), turn and baste with the remaining teriyaki sauce.
- Serve with lime wedges and a sprinkling of roughly chopped parsley.
