Breakfast Muffins

Perfect for those mornings where you need a quick and tasty breakfast.
Serves: 6 people (2 per portion) | Prep time: 30 minutes | Cooking time: 50 minutes

Ingredients
- 4 Eggs
- 50g Cream cheese
- 30g Self raising flour
- 50g Scottish cheddar cheese
- 60g Scottish smoked bacon medallions
- 100g Scottish baby button mushrooms
- 60g Cherry tomatoes
- Salt and pepper, to taste
Method
- Whisk eggs, cream cheese and self raising flour.
- Saute (quartered) mushrooms - leave to cool.
- Saute (diced) bacon - leave to cool.
- Roast (quartered) cherry tomatoes - leave to cool.
- Fold cheese, bacon, mushroom then tomato into the batter.
- Pour out individual muffins into muffin case.
- Cook 180°F/200°C/Gas Mark 6 for 20 minutes, remove and allow to cool.
