Breakfast Muffins

Perfect for those mornings where you need a quick and tasty breakfast.

Ingredients

  • 4 Eggs
  • 50g Cream cheese
  • 30g Self raising flour
  • 50g Scottish cheddar cheese
  • 60g Scottish smoked bacon medallions
  • 100g Scottish baby button mushrooms
  • 60g Cherry tomatoes
  • Salt and pepper, to taste

  

Method

  1. Whisk eggs, cream cheese and self raising flour.
  2. Saute (quartered) mushrooms - leave to cool.
  3. Saute (diced) bacon - leave to cool.
  4. Roast (quartered) cherry tomatoes - leave to cool.
  5. Fold cheese, bacon, mushroom then tomato into the batter.
  6. Pour out individual muffins into muffin case.
  7. Cook 180°F/200°C/Gas Mark 6 for 20 minutes, remove and allow to cool.
