Pancake Flight

Recipe

Ingredients

For the pancakes:

  • 135g Plain Flour
  • 1 tsp Baking Powder
  • 1 heaped tbsp Caster Sugar
  • 125ml Milk
  • 1 Large Egg, lightly beaten
  • 2 tbsp Butter, melted and cooled for 30 seconds

For the toppings:

Fried Egg, Bacon & Maple Syrup Pancake:

  • 1 Egg
  • 2 slices Streaky Bacon
  • 1 tsp Maple Syrup
  • Cracked Black Pepper, to season

Marshmallow, Peanut Butter Pretzels Pancake:

  • 10g Mini Marshmallows
  • 2 tsp Peanut Butter
  • 5 Pretzels
  • 5 Gummy Mix Sweets  

Avocado & Smoked Salmon Pancake:

  • ½ a ripe Avocado, sliced
  • 1 piece Smoked Salmon
  • 1 tsp Lemon Zest

Popcorn Biscuit Pancake:

  • 1 tbsp Biscuit Spread
  • 10 pieces Sweet & Salted Popcorn
  • 5 small Raspberries

Hot Honey & Halloumi Pancake:

  • 90g Halloumi
  • 5g Baby Spinach
  • 1 tsp Honey
  • 1/6 tsp Paprika
  • ¼ tsp Chilli Flakes

Strawberries & Cream Pancake:

  • 3 Strawberries
  • 1 heaped tbsp Clotted Cream
  • 1 sprig of Mint
      

Method

  1. To make the pancakes, whisk the eggs, milk and butter together and pour into a large bowl, along with the other pancake ingredients. Whisk until smooth and allow to stand for a few minutes.
  2. Heat a non-stick frying pan on a medium heat and spritz with a little oil. Add the batter using a ladle or jug and fry the pancakes two at a time for a few minutes until the top of the pancakes bubble, then flip and fry the other side. Do this in batches until you have six fluffy pancakes.
  3. Add the toppings to each pancake.


Fried Egg, Bacon & Maple Syrup:

  • Place the bacon under a hot grill for a few minutes on each side until crispy. Heat a large, heavy-based frying pan with a little olive oil, on a medium heat and fry the egg until the white is fully cooked but the yolk is still soft.
  • Place the bacon on top of a pancake, top with the fried egg, drizzle with maple syrup and season with cracked black pepper.

Marshmallows, Peanut Butter Pretzels:

  • Spread the peanut butter on a pancake and place the marshmallows on top and blow torch them or pop them under a hot grill. Top with the sweets and pretzels.

Avocado & Smoked Salmon:  

  • Top a pancake with sliced avocado and sliced salmon slithers. Scatter the lemon zest on top.

Popcorn Biscuit:

  • Take a butter knife and spread the biscuit spread on top of a pancake, then top with the popcorn pieces.

Hot Honey & Halloumi:

  • Slice the halloumi into strips and cook on a hot griddle pan for a few minutes, until each side is soft and has dark griddle marks.   Mix the honey with the chilli flakes and paprika. Top a pancake with the spinach, halloumi and then drizzle over the hot honey.

Strawberries & Cream:

  • Hull and slice the strawberries, then spoon the cream onto a pancake and add the strawberries and the mint.
