Smashed Butter Beans on Toast

Ingredients
For the Butter Beans:
- 1 x 400g tin Cannelloni Beans
- 3 Garlic Cloves
- 20ml Olive Oil
- 15g finely grated Parmesan Cheese
- 50ml Fresh Lemon Juice
- Sea Salt and Black Pepper
Toppings:
Mushrooms & Soy:
- Slice button mushrooms and sauté in a little olive oil, finish with some dark soy sauce and warm through.
Tomato & Balsamic:
- Halve some cherry tomatoes, drizzle with a little balsamic vinegar and some garlic shavings, then bake for 10 minutes.
Maple Bacon:
- Drizzle maple syrup over some streaky bacon rolls and bake in the oven for 10 minutes.
Avocado & Paprika:
- Thin wedges of avocado sprinkled with lemon and paprika.
Method
- Drain the beans.
- Peel and finely chop the garlic.
- Heat the oil in a frying pan, add the garlic and sauté for a minute.
- Then, add the butter beans, lemon juice and salt and pepper and heat through gently.
- Add the parmesan cheese and then turn off the heat.
- Smash the beans to make a thick pâté.
