Smashed Butter Beans on Toast

Ingredients

For the Butter Beans:

  • 1 x 400g tin Cannelloni Beans
  • 3 Garlic Cloves
  • 20ml Olive Oil
  • 15g finely grated Parmesan Cheese
  • 50ml Fresh Lemon Juice
  • Sea Salt and Black Pepper  

Toppings:

Mushrooms & Soy:

  • Slice button mushrooms and sauté in a little olive oil, finish with some dark soy sauce and warm through.

Tomato & Balsamic:

  • Halve some cherry tomatoes, drizzle with a little balsamic vinegar and some garlic shavings, then bake for 10 minutes.

Maple Bacon:

  • Drizzle maple syrup over some streaky bacon rolls and bake in the oven for 10 minutes.

Avocado & Paprika:

  • Thin wedges of avocado sprinkled with lemon and paprika.

Method

  1. Drain the beans.
  2. Peel and finely chop the garlic.
  3. Heat the oil in a frying pan, add the garlic and sauté for a minute.
  4. Then, add the butter beans, lemon juice and salt and pepper and heat through gently.
  5. Add the parmesan cheese and then turn off the heat.
  6. Smash the beans to make a thick pâté.
