Banana Peanut Butter Cornflake Bars

Ingredients

  • 200g Harvest Morn cornflakes
  • 100g Unsalted butter
  • 150g Smooth peanut butter
  • 150g Golden syrup
  • 3 x Bananas
  • Juice x 1 small lemon
  • 200g Dairyfine milk chocolate
  • 1 x Shallow baking tin approx. 23x18cm– slightly oiled

Method

  1. Cut the butter into chunks.
  2. Put the peanut butter, golden syrup and butter in a glass bowl – microwave on medium for a couple of mins to melt – stir well.
  3. In a bowl break up the cornflakes with the end of a rolling pin.
  4. Add the melted mixture and stir well.
  5. Put the mixture into the tray and press down.
  6. Slice the bananas and put into a bowl – add the lemon juice and gently coat the bananas in the juice.
  7. Put the sliced bananas in a single layer over the top of the cornflake mix – gently press them in slightly.
  8. Put in the fridge to set. Break up the chocolate and put into a heatproof bowl – put this over a pan of boiling water – make sure the bottom of the bowl does not touch the water.
  9. Once the chocolate has melted – gently spread the chocolate over the top of the bananas.
  10. Allow to cool - then cut into 9 squares – keep in the refrigerator till ready to serve.
