Chilli Chocolate Mousse

Spicy and sweet, this rich chocolate mousse is a delight.

Ingredients
- 225ml Double Cream
- 3 Egg Whites
- 75g Caster Sugar
- 225g Dark Chocolate 70%
- 1 tsp Chilli Powder
To serve:
- Dark Chocolate, grated
- Chilli Flakes
- Chilli Powder
- Pinch of Salt
Method
- Whip cream until thickened into soft peaks.
- Next, whip egg whites into soft peaks then gradually add sugar and whisk again until stiff peaks.
- Melt the chocolate in the microwave in 20 second blasts until fully melted and smooth, then stir through the chilli powder.
- Fold the whipped cream through the egg whites.
- Finally, fold the melted chocolate through the mixture and divide between 6 small glasses or bowls.
- Leave in the fridge for 1-2 hours until set, then top with grated chocolate and a pinch of chilli powder and chilli flakes.
