Chocolate Spaghetti

Ingredients

  • 120g Spaghetti
  • 1 tbsp Extra Virgin Olive Oil
  • 60g Dark Chocolate
  • 150ml Double Cream
  • 1 tsp Icing Sugar

For Toppings

  •   7 Raspberries
  •   2 Strawberries
  •   2 squares of White Chocolate  

Method

  1. Hull and slice the strawberries and remove the stones from the cherries. Place all the fruit on a small plate and set aside.
  2. Take a vegetable peeler and shave the chocolate to make some white chocolate shavings – these are your sweet Parmesan equivalent.
  3. Cook the pasta for 8-10 minutes on a high heat in a pan of salted boiling water, then drain well.
  4. Whilst the pasta is cooking, take a saucepan and heat the cream, add the chocolate, oil and icing sugar, mix well and remove from the heat once you have a velvety sauce.
  5. Tip the pasta into the sauce and coat well, serve in a large bowl topped with the fruit and the white chocolate shavings.
