Father's Day Cupcakes

Ingredients
- 100g Plain Flour
- 140g Caster Sugar
- 20g Cocoa Powder
- ½ tsp Baking Powder
- 1 tsp Vanilla Extract
- ¼ tsp Salt
- 40g Unsalted Butter, softened
- 120ml Milk
- 1 Egg
For the icing:
- 600g Icing Sugar, sifted
- 300g Butter, softened
- 15ml Milk
- A few drops of Blue Food Colouring
- Assorted Sweets
- Hundreds & Thousands
Method
- Preheat the oven to 180°C.
- Place the flour, cocoa powder, sugar, baking powder, salt and butter into a bowl. Using a handheld electric whisk, mix on a slow speed until a sandy texture forms and everything is combined.
- In a jug, whisk together the milk, egg and vanilla extract. Slowly pour about half of the liquid into the flour mixture and beat to combine. Increase the mixer speed to high and scrape down the sides of the bowl with a spatula. Add the remaining liquid and continue mixing until the batter is smooth, being careful not to overmix.
- Spoon the mixture into paper cases, filling them about two-thirds full. Bake for 20–25 minutes, or until the sponges spring back when lightly pressed and a skewer inserted into the centre comes out clean. Allow the cupcakes to cool slightly in the tray, then transfer to a wire rack to cool completely.
- To make the icing, beat the icing sugar and butter together in a large bowl until combined. Add the food colouring and a few splashes of milk if the mixture needs loosening, then continue beating until smooth and fluffy.
- Fill a piping bag fitted with a star nozzle and pipe the buttercream onto cooled cupcakes. Decorate with your chosen sweets and hundreds and thousands.
