Kevin Biscuits

Ingredients
- 150g Plain flour
- 100g Cowbelle salted butter - chilled
- 50g Icing sugar
- 1tsp Cornflour
- 1tsp Ground ginger
- 25ml Cold water
- Icing to decorate:
- 60ml Egg white (one medium egg-white only)
- 240g icing sugar-sieved
- Green food colouring
- Orange food colouring
Method
- Preheat the oven to 180°C/350°F/Gas Mark 4.
- Sieve both flours and the ground ginger into a bowl.
- Take the butter and cut into little cubes and rub this in using the tips of your fingers until you have mixture that resembles fine breadcrumbs, add the sugar and bring the dough together using your hands and adding water drop by drop.
- Roll out the dough into 5mm and cut into carrot shapes (you can create a cardboard Kevin to cut round using an old cereal box or any strong cardboard - he needs to be about 8-10 cm tall).
- Bake on a lightly greased flat baking sheet for 10-15 minutes until the biscuits are golden, allow them to cool on a wire rack.
- Put the egg white into a bowl and a mix in the icing until you have a smooth icing that is of a good consistency to pipe with, it needs to just hold its own shape for a few seconds, if it’s too wet add a little more icing sugar and if it’s too firm add a drop of water.
- Colour 2/3 orange and 2/3 green using 2 separate bowls.
- Pipe each biscuit doing the green tops first using a piping bag filled with green icing with the end snipped off and the very tip or a number 2 nozzle.
- Pipe the carrots using a piping bag filled with orange icing with the end snipped off and the very tip or a number 2 nozzle.
- You can add as much detail as you would like.
- To create Kevin’s face mix the left over royal icings and pipe onto the carrots using the same nozzle.
