Kevin the Carrot Cheesecakes

Ingredients

  • 1 Vanilla Cheesecake, defrosted & cut into 8 slices
  • 10-12 drops Orange Food Colouring
  • 200g White Chocolate, finely chopped
  • 100g Double Cream
  • 15ml Egg White
  • 135g Icing Sugar
  • 4 drops Green Food Colouring
  • 20 Chocolate Chips

You will need 4 short lolly sticks, cut in half  

  

Method

  1. Mix up the icing using egg white, icing sugar and green food colouring until you have thick royal icing. It should be liquid enough to pipe but hold its shape as you do.
  2. Take a piping bag, snip off the very tip of the nozzle, and pipe 8 green carrot tops onto each lolly stick on some greaseproof paper. Then set these aside to dry.
  3. Heat the cream on the hob in a small saucepan, and once bubbling, add the white chocolate and stir until you have a silky ganache.
  4. Add the food colouring and remove from the heat stirring vigorously, then allow this to cool slightly for a few minutes.
  5. Place the cheesecake slices on a wire baking rack, leaving gaps between the slices, and pour the ganache over covering each slice fully - reserve a little of the ganache for piping.
  6. Take the remaining ganache and heat it for 10 seconds in the microwave until it becomes fluid, then pour into a piping bag and snip the end to draw some lines on the carrots.
  7. Add the green carrot tops to each slice, poking them into the cheesecake slightly so they stick out creating carrot tops for each slice.
  8. Take the chocolate drops and add two eyes on each carrot, then cut 4 chocolate drops in half and place these onto the cheesecakes to create Kevin’s mouth for each slice.
