Mango Sorbet

Take on the warm weather with this cooling dessert.
Serves: 4 people | Prep time: 10 minutes plus 16 hours freezing

Ingredients
- 4 Mangoes
- 40ml Lime Juice
- 120ml Water
- 200g Caster Sugar
Method
- Slice the mangos in half, carefully cutting round the stone and scoop out all the flesh.
- Keep two mango skin halves in the fridge and discard the others. Chop the flesh into chunks and freeze overnight.
- Add all ingredients to a blender and blitz for 7 minutes until the pulp feels smooth and there are no grainy bits.
- Spoon this into a tub and freeze for a minimum of 4 hours.
- To serve, scoop the mango into balls and fill the mango skins with the sorbet.
