Mango Sorbet

Take on the warm weather with this cooling dessert.

Serves: 4 people   |   Prep time: 10 minutes plus 16 hours freezing

Ingredients

  • 4 Mangoes
  • 40ml Lime Juice
  • 120ml Water
  • 200g Caster Sugar  

  

Method

  1. Slice the mangos in half, carefully cutting round the stone and scoop out all the flesh.
  2. Keep two mango skin halves in the fridge and discard the others. Chop the flesh into chunks and freeze overnight.
  3. Add all ingredients to a blender and blitz for 7 minutes until the pulp feels smooth and there are no grainy bits.
  4. Spoon this into a tub and freeze for a minimum of 4 hours.
  5. To serve, scoop the mango into balls and fill the mango skins with the sorbet.
